Menu Planning Day!

So last week I picked dinner from a basket. It made grocery shopping streamlined as well as I knew what I was going to make. So I will continue to do it. Now I just need to get some strength to avoid the high carbs in the meals LOL.

This is what I picked for next week:
Creole Fish w/ rice and veggie (I will resist the rice and have a side salad)
Grilled Paprika Chicken Dinner Packs
Slow Cooker Cube Steak w/ mashed taters & salad (wont have the taters, just increase the serving of salad)
Easy Baked Chicken & Potato Dinner w/ salad (wont have the potatoes)
Italian Chicken Fingers w/ marianara, pasta, and veggies (Ill have a salad)
Beef Roast in the Rotisseri w/ a veggie medley and salad  (I didn't pick this out of the basket, I just have a nice roast in the freezer that needs to be cooked)
Kung Pao Chicken Kabobs w/ grilled veggies and a salad (recipe created by me)

Once I have started the week, I will post an update to this post with the recipes I enjoyed with the link or recipe written out of the meal.

Family Friday Updates

Samantha:  Went to the drs on Monday afternoon about her cough she has had for a while now and her previous pedi just said to wait it out. I finally was able to transfer her to Paytons pedi and he said her cough should have been treated if the antibiotics that the hospital didnt make it go away. He said it could have gotten much worse if I didnt bring her in like I did. We she was put on an inhaler for 5 days and in case she has a coughing fit, a steroid to help with any inflammation in her airways, and different antibiotic than she had the first time. She doesnt cough any more!!! So happy. Well, the steriods turned her into a speed racer. Hopefully after tomorrow, she will go back to her normal speed.

Payton: Well she had her 6 month drs appt on Monday. The dr said she is acting like a 9 month old baby because of crawling and self feeding. And she is petite in her weight, but average in her height. Shes just growing up so fast :'(. Yesterday, I took her to get her ears pierced. She cried for a little bit but was fine once I snuggled with her for a minute. I couldnt get her birthstone earrings, so I got her pink flowers. I will just get her some for her birthday. Oh and she sat up by herself too!! :)



Spencer: he got a raise at work!! He was so happy.

Me: Set a goal of August 24th to be a my goal weight of 130lbs.

Reviews on recipes that we liked from the menu planning.

 I will post the ones that we actually like and the ones that arent any good in our opinion. I havent kept to the actually days that the recipes fall on, sooo...
    We have had the Simple Creamy Chicken Risotto.
    It was pretty good. My husband and I actually didn't eat it (tasted it) because Spencer treated me to a date night. But the girls loved it.
   I made the Spicy Pepper Steak and I am not that fond of it. The hoisin sauce had too much of something that stuck out and over powered everything. I threw the recipe card and strip of paper away.   Tomorrow we are having Pan-seared chicken with veggies  Oven baked chicken w/ roasted taters and veggie. I dont remember where I got the recipe so I will post it if it is any good.

Recipe for Oven Baked Chicken
1tbsp butter
2/3 c Bisquick mix
1/4 tsp pepper
1 1/2 tsp paprika
1 1/4 tsp salt
1 cut-up whole chicken (3 to 3 1/2 lbs)
Preheat oven: 425*
Melt butter in a baking dish in the oven. Stir together Bisquick, paprika, salt, & pepper in a bowl. Coat chicken. Place chicken skin down in the dish. Bake for 35 mins, turn chicken. Bake for 15 more mins or until chicken is down.

Pan-seared Chicken with Vegetables
1/8 tsp black pepper
1/8 tsp paprika
2 tbsp all purpose flour
4 bone in chicken breasts
2 tbsp olive oil
2 small red onions, cut into quarters
8 oz fresh baby carrots (about 16)
1 lb new potatoes, cut into quarters
1 1/2 c chicken stock
3 tbsp lemon juice
1 tbsp chopped fresh oregano leaves
chopped fresh thyme leaves

Preheat oven: 350*
Stir together black pepper, paprika, & flour on a plate. Coat the chicken w/ flour mixture. Cook chicken in oil until well browned. Remove. Add potatoes & onions, cook 5 mins. Add carrots, stock, lemon juice, & oregano, bring to a boil. Transfer to a baking dish and cover. Cook for 20 mins. Uncover and cook for 15 mins or until chicken is done and veggies are tender. Sprinkle with thyme.

Ok, now to the review of this dish. Evidently its good or it wouldnt be here. I used thighs instead of the breast because I didnt have the breasts like I thought. I used white onion, 1 large one was plenty. I also used russet potatoes because I didnt have the new, 3 were plenty. I also used broth. I didnt have the fresh herbs, only had the ground oregano and I didnt use the dried thyme leaves. I thought the lemon juice was a bit much and will be omitting it from the recipe the next time I make this.

I would love to trade places with my husband, especially on the days that Sam is acting out and Payton is super cranky; when I have to do some running around to drs appts and other appts on only 3-4 hours of sleep.

Back at Atkins!

After the moving stress is all but gone, I am able to finally get the motivation to get back on the diet. I havent gain any of the weight I lost back. I did put back on inches in my bust, waist, and hips. Just an inch each. Probably some bloating from the carbs I have eaten. I lost half an inch in both my upper arm and thigh.

thigh: 24.5

Im kinda impressed that I didnt gain any of the weight back since I heard that stopping this diet you gain all the weight back and then some.

Menu Planning Day

I have created a menu card basket and every Friday I will pull 7 strips of paper that will have dinners on them. I have included restaurants as well. I am hoping to make my dinner planning simplier as well as my grocery shopping. From these cards I will make my grocery list.

Menu for this week

A lot of chicken this week, thanks to my little Samantha who picked the cards.  Well see how well it goes over. This menu can make it easy for me to sub in extra veggies for myself where there is high carb foods.  I will eat an extra portion of the veggie or a salad.

Family Friday Update

Every Friday I will be doing an update on my family, especially the girls.
Samantha:
  Her vocabulary is exploding and she is a motor mouth. She tries so hard to be a big helper.
Payton:
  She is full blown crawling now. She is also self feeding. My littlest princess is trying so hard to catch up to Sam. She has slept in her own room for I think 3 nights.

Spencer:
   Not much with him. Always working.
Me:
   I plan on getting back on my diet Phase I of Atkins for the 2 weeks then I am going to add in more low carb things like low carb tortillas and stuff. Ill probably allow for myself to have one serving of rice, pasta. or potatoes a week. Not sure yet. I have maintained my weight within a pound or so without dieting. Will update with current measurements and weight Mon when I restart the diet. I am hoping for no difference.

Other stuff:
   Almost completely out of the old house. I still have stuff to do and put away at the new house. We got our new furniture and I dont like getting up from the couch now :D. The bed is comfy too. I got some new sheets but they irritated my skin so bad I couldn't go to sleep. I am going to try washing them a ton of times to see if that works.

La, La, La

   Well, we bought the sectional and mattress set. I got some decor things as well as some fabric to redo the glider and ottoman. All we need to do now, is sign the lease and get the keys; buy the tv and entertainment center; and pay for the dining room set. I am going to go tomorrow to sign the lease and get the keys. I will pack some stuff like all the bags of new stuff into the trunk and bring it to the new place. That's when I will take pictures of the before. Can't wait. I will also call the furniture store and set up for the furniture to be delivered. So much to do, transferring all the utilities. Going to rent a uhaul truck for this Sunday cause Spencer will most likely have to work on Saturday. Then next week I will spend a couple days cleaning this place. EXCITED!
   Not been following the diet these past few days. Just haven't felt like it. So tomorrow I will be back at it. Hoping I didn't gain too much weight, but I know that is something I will have to deal with.
   News on the Payton front: we think she is crawling while we are not watching. Plus she loves Stove Top and can feed herself. She'll be 6 months old on Tuesday (8th).

New home

Well I will be adding pictures of our new home before I decorate it and after. It will give me something to do. The living room is going to have new furniture and new entertainment center with a new flat screen tv.
This is the sectional we are going to get from Hank's furniture store in Rogers. It has massage in the sofa side and storage. We <3 it.  The entertainment center is coming from Walmart. I think it will match wonderfully. I would add a pic but can't get it off the Walmart website. And the TV will also come from Walmart.
 The dining room will have a nice table and 6 chairs and I am planning on getting a "family" plaque to put on the wall. I will need to get a curtain for this room and the living room.
  The master room will get a new mattress set and I have gotten the new bedding in brown and blue. It matches the bathroom. I just need to get some curtains and wall decor.
 Payton's room will get decorated in Winnie the Pooh and glow-in-the-dark star stickers. I need to get curtains, toy box and shelving for her room.
 Sam's room is in Tinker Bell and I am getting her a fuzzy purple rug. She is also getting the star stickers too. I have calendars for both rooms that I am taking the pictures out of and putting them on the wall as decor. She also needs a toy box and shelving.
Their bathroom is in pink and purple with a funky shower curtain. I need to get Payton a laundry basket.
 Other misc. stuff I want are 3 different vinyl wall decor: for the bedrooms, cat litter tent, a food and water bowl for the dog, Sasha. New screen for the back door and a piece of fencing to close in the back yard. I also need to get a coat hook and mats for the front door.
Will post before and after photos. Can't wait. SO EXCITED!

Can't believe it's February.

  Well, I checked the website and they got our money from our refund minus about $200 bucks. Not sure what thats about. Oh well. They are going to deposit it into my checking account tomorrow. Im so excited. I couldn't sleep last night because I am so excited. LOL. So much stuff going to happen and it feels like a new start. New furniture and a new bigger place. Our cold water pipes down stairs are frozen >:O. I am so tired of this crap and can't wait til we move and this not be a problem any more.
  The diet has been kinda shacky with my cheating. I have been sorta unmotivated, I guess because of being restless and all the snow. I am going to get back on track tomorrow. I made some extra chicken and the Hubs went and picked up some veggies so I should be able to keep from eating junk. Now I need to resist my habit of drinking a lot of soda.
  The girls:
 Sam is getting taller. She can't just run underneath the overhang of the counter anymore. LOL She bumped her head and now she ducks every time she runs that way. She is getting more talkative and you can actually understand most of what she says. Sam has been potty trained for about 6 months now. YAY!!!
 Payton is now getting onto her hands and knees, rocking back and forth. Fully eating solids and shes loving it. I have been trying to get her to feed herself really soft veggies and shes grabbing the food and sorta getting it to her mouth. Shes also got the bumps where her bottom teeth are coming in. Now sleeping through the night is not going the way I would like it to go. Shes a boobie girl and still BFing a couple times a night. Hoping to get this habit broken since shell be in her own rooms once we move.
   Well, we got a couple inches of snow (about 5 or so inches) and expecting more Friday night, Sunday night, and Monday. I am really wanting Spring to get here soon.

Payton wiggled herself under her swing. LOL I think she is playing hide-n-seek with her sister, Sam. <3 these girls.

Its the end of week 3 of Induction and I kinda screwed up eating stuff I shouldn't have. Friday went to BBQ place and ate stuff I shouldn't have. Yesterday, I definitely went off the plan, which showed in the amount of weight I lost.

Goals for this week: Drink more water. Limit the intake of Artifical Sweeteners. Eat more salad veggies.
Hoping to have our taxes this Friday. Can't wait. Also thinking since I will be getting stipends back from school, I may buy a bowflex. :)

Low carb recipe:  Chicken Cacciatore
chicken meat, cut up (white or dark, and as much as you want, I did 6 thighs)
can of sliced mushrooms, drained (walmart brand less carbs)
2 zucchini, diced
1 onion, diced
1 bell pepper, diced
1 (28 oz) can of crushed tomatoes with Basil (Hunts has no added sugar)
1 tsp minced garlic or 1 clove garlic, crushed
1/2 tsp salt
1/4 tsp black pepper
2 tsp Italian seasoning
Parm Cheese (optional)

Cook the chicken, onions, mushrooms and garlic in 2 tbsp of olive oil until chicken is done. Add the tomatoes and seasonings brin to a boil then reduce heat and cook for 20 minutes. Add zucchini now (if you want them still crunchy ~ if not add in the beginning). Cook for another 10 minutes. Sprinkle with Parm.
Ill have to figure up the net carbs. :)
